Sarawak Laksa

Raining for quite sometime already, so the weather was cooling.  So, decided to cook a hot and spicy Laksa.  The ingredients was easy to find and easy to prepare.  Invited my parent and brother to came over and have this laksa dinner together.

This basically what we need to cook Laksa.  250g Laksa paste. 200ml Coconut milk. 1 pack of Rice noodle. Chicken meat. Shrimps. Fried eggs. Bean sprouts.  All ingredients easy to get at market or supermarket.

Soak the rice noodle in room tempreture water for 1 hours. After that, drain the water.  Boil some water enough to cover the entire rice noodle and cook for like 2 - 3 minutes. Then, take out the rice noodle and set aside for cooling.

This shrimps have to be real fresh, otherwise you will spoiled the entire things. :P

Some people like to put bean sprouts some do not like.  In this case, I put some of it.

Use a cooking bowl and cook some water until boiled.  Put in the meat and cook until well done. Drain the water and set the meat aside.  Slice it later on when it cool down.

Fried some eggs and slice it.

Boiled some water and put the shrimps into it. Take it out when the shrimps become orange.

Boil 2000 -2500ml water.  When it boiled, Put the Laksa paste into it and stir well.  Pour in the 200ml coconut milk and stir well.  let the soup cooked for another 10 - 15 minutes.

While waiting the soup to be cooked, arrange the rice noodle and the other ingredients in to a bowl.

The soup will be ready by now. Close the stove and bring the big bowl of soup to the table.  Then pour some soup into the bowl with the  rice noodle and other ingredients in it.  There you go, The Sarawak Laksa ready to be served. Yummy.  Happy trying.

The Event

The NB Motors 40th Anniversary - Service Campaign and Lucky Draw started today. Customer and visitor came in as early as 8am. Wow..8am. hehe Everyone was doing the one last touch up and clean up at every corner. Hope the event gone well for the next 2 days.

Everyone was rushing for the 40th Anniversary NB Motors event, the Service Campaign and Lucky Draw.  The event will be held at Wisma NB Group for 3 Days starting 22nd December Until 24th December.  Was joining the cleaning and decor with Ling, unclelim and others colleagues last nite.

Kind of last minutes preparation but job well done for those who involved.

Loh Mai Gai (Steamed Glutinous Rice With Chicken)

Suppose to relax and rest at home while taking a day leave from company.  But I made myself busy by trying to make Loh Mai Gai (Steamed Glutinous Rice with Chicken).  Just donno why. hehe ... May be I love making nice foods and share with family and friends.  Oh, need to thanks my helping hand, my wife because of me ... she also tired because of this.  But I rewarded her with nice Loh Mai Gai.  Ha! :P

Here's the Steps.

Glutinous Rice 1kg  - Wash the rice and soak it for 3 - 4 hours in rice cooker bowl.

Prepare 4 tbsp of Shallot Oil.  Separate the Fried shallot and the oil.

Marinate Chicken and Mushroom:

Drain the 1 chicken breast meat with hot water, debone and cut to small pieces.  Need 20pcs of small mushroom and cut to few slices.  Use Mixing bowl to marinate the chicken and mushroom with 1 1/2 tbsp Oyster sauce, 1 tbsp light soy sauce, 1/2 tsp salt, 1/2 white pepper powder, 2 tbsp cornstarch and fried shallot.  Mixing them well and leave it to marinate for 1 hour.

Seasoning the rice :

After Soaking for 4 hours, drain the rice.  Add in 900ml of water into the rice.  Add in 4 tbsp of shallot oil, 2 tbsp of oyster sauce, 3 tbsp of light soy sauce, 3 tbsp of dark soy sauce, 4tbsp of sugar, 2 1/2 tsp of salt (to taste) and 1/2 white pepper powder.  Mixe them well.  Then cook the rice using rice cooker.  When cooked, fluff the rice using fork and wait until the rice not so hot.

p/s : while the rice almost cooked, you can place the chinese sausage on top of the rice to let it cooked for a while.

To Assemble :

Get ready your aluminium bowl.  First place few pieces of chicken, chinese sausage and mushrooms into the bowl. Cover it with glutinous rice until the bowl is full. Cover and steamed the Loh Mai Gai over medium heat for 30 mins.  Turn out he Loh Mai Gai on to a plate and serve hot. Yummy!!!

Be patience while waiting. :)

While waiting for the rice to be soaked, you can preparing and marinate the chicken meat and mushrooms.

The helping hand is trying to Seasoning the rice.  Drain the rice after soaked and pour in 800ml of water and start add in all the seasoning.

After seasoning. Smell good. Ready to be cooked.

Fluff the rice with fork. let it cool for a while.

Time to assemble.

After steamed for 30mins.  Hot Loh Mai Gai is ready to be eaten! hehe... Glad everyone like it...Happy Trying.

X'mas tree in the air

X'mas is coming. Have you though of what gift to buy yet? Have you received any X'mas gift yet? Have you plan how to celebrate yet? hehe ... The celebration and the joy is everywhere now.  Received a gift from my cousin.  A product he designed, "X'mas tree in the air". What an idea he had. Using Air Plant as X'mas tree. Very different and nice right?  You can decor work space or study table or anyway you want to put it.  You just need little bit of water, little bit of sunshine and say no to soil. Hello, Hielo

Love to see new kind of food keep flowing in to Kuching City.  Premium frozen yogurt@hielo, opened at Onejaya Lifestyle Mall which I would like to have a try.  After Sunday service at church Ling and I went to Expert Kopitiam to have our lunch before we going to hielo for dessert. hehe.

Original flavour + oreo + strawberry.  Waffer no stock. Haii.  RM12.90 for size 7oz.

Sushi

She bought a sushi mat not long ago,  which another way of asking me to try making sushi.  Since Giant Supermarket was quite near now, so I decided to go there to grab some ingredient.  Too bad, not all ingredients can be found at Giant supermarket, especially the sushi rice and sesame seed which I bought them from organic store in Cold Storage later on.  After bought all the ingredient we started making sushi and get messy in the kitchen.  A good side to check it out on sushi making -  http://www.mysushidaddy.com

The Sushi Rice and Sesame Seed.

Cooked 2 Cups of sushi rice and mixed them with 2 1/2 tbsp Rice Vinegar, 1 tsp sugar and few pinches of salt. Allow rice to cool to room tempreture.  While waiting, Cut the cucumber and carrot into sticks.  Fried 2 eggs and open a can of Ayam Brand Tuna.  Few Crab Sticks.  Opps.. 1 Pack of Seaweed Nori not in the picture but also needed.

Get ready you sushi mat and ready to roll.  First, put half the seaweed nori on the mat. Grab some sushi rice to cover the entire seaweed nori.  Pour some sesame seed to the rice and flip over.  Give it a press and start filling the tuna, cucumber and carrot.  Start rolling the stuff together.

When get this then you are done and ready to cut it to pieces.

Make sure you have a real sharp knife or else you will destroy everything. hehe

Ready to be serve. hehe.. yummy.

Sin Kee Siang Klang Claypot Bak Kut Teh 新纪香肉骨茶

Another new place to eat Bak Kut Teh, Sin Kee Siang Klang Claypot Bak Kut Teh, Phew~~ the name so long.  It was located on the left hand side of the road towards Jalan Song's traffic light from Kuching Buddhist Society (居士林).  Turn in before a car wash centre and you also will see a big Sin Kee Siang sign board.  Kind of easy to find.  Their business hour will be from 9am - 10pm.

Nice Design.  No aircon but with ceiling fans, don't know how's the condition when it come to very hot day.

The Menu. Not only Bak Kut Teh, but also some side dishes like vege, fried egg and etc.

Nice.  But It's the first time i tried bak kut teh with sticky soup. Is sticky then the other store. abit only .. ermm. abit sticky la. :P

Worth to try but if you are rice eater, then you need few plates because it real less. :P
