Snowskin MoonCake 冰皮月饼

Posted by Terence On 2 comments
Baked Mooncake or Snowskin Mooncake? hmm... Snowskin moonckae first. hehe... Never make mooncake before, so lets try. hehe .. There was alot of recepi in the internet, but we just try this simple one.

Recipe (10 pcs mooncake, using 5 - 6cm diameter mould):
-Plain/warm water - 300ml
-Icing sugar - 150ml
-Pandan paste - 1 tbsp
-Cooked glutinous flour - 200g
-Crisco - 50g

Ingredients and mould.

Mix icing sugar and cooked glutinous flour until well.  Pour the flour into the water and stir to form dough. Remember, don't pour water into flour but the other way round. :)

This was the dough after we pour in the flour and stir it.

Add and mix the Crisco into the dough to make it soften.

Then we put the dough aside and we started rolling the paste into round shape.

Divide the dough into portions and put in the paste.

Covered up the paste and rub some flour to it before you put into mould to make a shape.

Done. :D

If you can't wait, you can eat it when ready or you can put into fridge first.

Look good in the inside.  Time to share with family and friends.  Yummy!  Happy Trying. :D

After take out from the oven. Yeah! Look good huh? ... hehe

Chicken Pie - Part 1

Posted by Terence On 1 comments
Chicken Pie was on the mind past few days.  So, wasting no time, search internet for the recipe and found a good one at http://myculinaryjournal.blogspot.com/2007/10/chicken-pies.html and then went to bought the necessary ingredients.  The recipe shared was enough for making 6 cups of  chicken pie, but we triple the recipe to made more pies. hehe

First, preparing the pastry first. So we need the ingredients below:
150 gm butter, 250 gm plain flour, 1 tsp sugar, 1 egg yolk, A pinch of salt, 1 tsp of herbs ( mixed / rosemary),
100 gm yoghurt.

First, sifted the flour. Then, add all the ingredients above into the flour except the yoghurt.  Using clean hand to rub all the ingredients until like breadcrumbs.

Get ready the yoghurt.

Add in the yoghurt and mixed it with the pastry using the clean hand.

This was the pastry after mixing all the ingredients.  Put the pastry into fridge for 30 - 45 minutes as it would be easier to handle it later on.  During this 30 minutes time, lets prepare the filling for the pie.

The ingredients needed for the filling as at below ( adjust to own preference):
1 big onion diced, Garlic diced, diced cooked potatoes, mixed vegetable,  Sliced button mushrooms,
2 chicken breast diced, oil, ½ cup water.

Seasonings :
1 tbsp cornflour mixed with 2 tbsp water, 1 tbsp sugar, 1 tbsp oyster sauce, salt n pepper to taste.

Get the filling ingredients ready.

First, heat 2 tbsp oil and fried the potatoes until golden and then set aside.  Then, heat 2 tbsp oil and fried the onion and garlic.  Add mixed vegetable, button mushroom, chicken and stir fried them. Add In potatoes and stir fried them together.  Add in the water and cook them for 5 minutes.  Add in seasonings and cornstarch and stir to thicken mixture.

Let the filling cool aside and is time to bring out the pastry from the fridge.
